If you’re like me, always on the lookout for healthy, tasty snacks that you can whip up in no time, then you’re in for a treat. Today, I’m sharing one of my all-time favourite snack recipes: Chipotle and Rosemary Roasted Chickpeas. These little bites of heaven are not only packed with flavour but also full of protein and fibre, making them the perfect snack to keep you energised throughout your busy day.

Makes 4 servings

Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle powder (adjust to taste)
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste


Instructions

Preheat your oven to 200°C (400°F). Line a baking sheet with baking paper for easy clean-up.

Prepare the chickpeas: After rinsing and draining the chickpeas, pat them dry with a clean kitchen towel. The drier the chickpeas, the crispier they’ll get!

Spread them out: Put the chickpeas on the baking tray and add the oil. After coating them arrange in a single layer. This helps them roast evenly and get that perfect crunch. 

Roast for 10 minutes, stirring after 5.

Whilst they’re in the oven combine the chipotle powder, dried rosemary, garlic powder, smoked paprika, salt, and pepper in a bowl.

Remove the chickpeas and add the seasoning mix to the chickpeas. Make sure each chickpea is well coated with the seasoning mix.

Spread them out: Arrange the seasoned chickpeas in a single layer and return to the oven for a final 5 minutes until they’re golden and crispy.

Cool and enjoy: Let the roasted chickpeas cool slightly before digging in. They’ll continue to crisp up as they cool. Store any leftovers in an airtight container at room temperature for up to 3 days (though they’re so tasty they might not last that long!).

Tips for Perfect Roasted Chickpeas
Dry them well: Moisture is the enemy of crunchiness. Pat those chickpeas dry!
Even layering: Crowding the baking sheet will steam the chickpeas instead of roasting them. Give them space.
Spice it up: Feel free to experiment with different spices and herbs. Curry powder, cumin, or even a sprinkle of parmesan can take these chickpeas in a whole new direction.

A Little Story to Inspire You

I started making these roasted chickpeas when Aurelia and Theo were little. They loved crunchy snacks, but I wanted something healthier than crisps. The first time I made these, I remember Aurelia saying “Mum, these are like magic beans!”. Since then, they’ve become a staple in our house and frequently come with us as a snack for when we’re out and about.
